- The fish sauce is fermented in large wooden barrels made from "bời lời" wood (or "vên vên" wood, "chai" wood) sourced from the forests of Phu Quoc.
- Only anchovies are used as the raw material for fermenting the fish sauce. Varieties such as striped anchovies, black anchovies, and red anchovies are selected to ensure the highest quality of fish sauce.
- The anchovies are freshly caught and immediately mixed on the boat after being pulled up from the nets. They are then rinsed and mixed with salt to preserve the fish meat and prevent decomposition, ensuring the fish sauce has the highest protein content and no unpleasant odor.
- The anchovies are salted with low impurity salt to maintain purity.
- The fermentation process (after salting the fish) lasts from 12 to 15 months, combined with traditional methods to produce fish sauce with a high protein content.
- The natural color of the fish sauce is akin to the color of a cockroach, thanks to the fresh salting process that retains the blood in the fish body and the extended fermentation time of the fish in wooden barrels for over 12 months..
