Luc Yen taro - A special kind of taro only found in Yen Bai
A glimpse into the famous taro of Yen Bai
The taro here has a striking purple color from the skin to the flesh, carrying a rich, chewy flavor and a characteristic aroma that captivates anyone who tastes it. Unlike taro grown in rice paddies, Yen Bai taro has a tenacious life force, adapting to all soil conditions, even on barren hillsides.
Every year after the Lunar New Year, people start planting taro seeds in soil holes and on upland fields. After 9 months, when the taro leaves start to turn yellow and wither, it's time for the harvest. Each taro plant produces only one tuber, with an average weight more than half a kilo. The large, plump tubers can weigh up to nearly 2 kg, packed with the essence of the earth and sky.
Dishes made from Luc Yen taro
Luc Yen taro is not only a simple gift from the Tay Bac mountains but also an endless source of inspiration for those who love exploring cuisine. From humble tubers, through the skillful hands of local people, they have transformed into countless delicious dishes that awaken all the senses, such as taro chè, fried taro, taro cake, and stewed taro. Each dish has its own unique flavor, but they all share the same chewy and fragrant taste of this specialty taro.
