The preparation process for chili bamboo shoots is quite unique. After harvesting, the shoots are peeled, washed, and arranged in earthen jars. Each layer of bamboo shoots is sprinkled with a layer of finely chopped fresh chili peppers mixed with salt. When the jar is full, it is tightly pressed down with stones to initiate fermentation. After about a month, the bamboo shoots are ready to eat.
