How to cook buffalo meat with Lom leaves
To prepare the dish, you need two main ingredients: fresh buffalo meat and Lom leaves (giang leaves), along with seasonings such as ginger, pepper, garlic, mắc khén peppercorns, and monosodium glutamate. Then, the fresh buffalo meat is broiled to add aroma, the burnt hair is scraped clean, and the skin is tightened, then sliced across the grain into bite-sized pieces.
Mince the garlic and ginger, add the mắc khén peppercorns and grind them finely, then marinate the buffalo meat for about 25-30 minutes. Heat the pot with a moderate amount of oil, then stir-fry the buffalo meat over medium heat. When the buffalo meat is tender, the chef will add the crushed Lom leaves. The dish will have a slightly cloudy broth with the light sourness of Lom leaves, and the buffalo meat will be tender and fragrant.
