Originating from Ly Nhan district, Ha Nam province, Vu Dai braised fish, also known as Dai Hoang braised fish, has a long and storied history. According to local legend, villagers in Vũ Đại created this dish during the Lunar New Year when resources were scarce, as a way to offer their ancestors a delicious and hearty meal.

Over time, Vu Dai has become renowned as a traditional craft village specializing in braised fish. The dish has gained immense popularity and is now considered a national treasure.
What makes Vu Dai braised fish so special?
The unique flavor and texture of Vu Dai braised fish are the result of a meticulous preparation and cooking process. Every step, from selecting the freshest fish to choosing the right earthenware pot and firewood, is carefully executed.
Ingredient selection
Only the freshest fish, caught daily, is used. The earthenware pots are imported from Thanh Hoa province, and the firewood is made from lychee wood, which effectively eliminates fishy odors and imparts a delightful aroma.
Cooking process
Before cooking, a layer of sliced ginger is placed at the bottom of the pot. The fish is then marinated with a blend of spices, including lemon, galangal, bone broth, ginger, crab essence, shallots, pepper, and chili. The stew is slow-cooked for 18-20 hours, requiring constant attention to maintain a consistent heat and prevent the liquid from drying out.
The final product
The finished dish features large, flavorful pieces of fish with a rich, savory taste. The meat is firm, rich, and not dry. When the lid is lifted, the aroma of the fish and spices is simply irresistible.
